I made a mango salsa for lunch – a super simple, quick and so delicious side with meat patties, or sausages, or falafel for example (I made my patties of minced meat, salt, pepper, egg, dijon mustard, chili flakes, onion and a bit of heavy cream).
2 fresh or frozen mango
1 red onion
Coriander/Cilantro (as much as you like)
Fresh chili or chili flakes (as much as you like)
Salt (as much as you like)
A pinch of black pepper
1 small teaspoon olive oil
Slice everything into pieces, put in a bowl and mix carefully with a spoon.
